Guacamole is most commonly known as an accompaniment to Mexican dishes i.e. nachos and tortillas. Its uses are extremely versatile, however, and Westfalia Guacamole can be used for burgers and sandwiches, wraps and rolls, terrines and mousses, savory tarts and quiches, cocktails and soups – too many to mention!

TOMATO AND CHICKPEA SOUP WITH BASIL OIL

2 Tbsp Westfalia Natural Avocado Oil1 large onion, chopped3 cloves garlic, crushed3 celery stalks, sliced1 Tbsp ground cumin1 Tbsp ground coriander2 cans chopped tomatoes2 Tbsp tomato paste2 cans chickpeas, drained2 cups vegetable stock1 Tbsp sugarSalt and milled pepperWestfalia Basil Avocado Oil, to drizzle.

SPICY DUKKA WITH OIL-DIPPED BREAD AND CRUDITÉS

Decant ½ cup of dukka mixture into a shallow bowl.4 Mix equal amounts of oil and vinegar together in a shallow bowl.5 Serve crudités and chunks of bread with oil mixture and dukka. To serve:Westfalia Mediterranean Avocado OilBalsamic vinegar3 cups assorted crispy seasonal vegetables, cut into stripsCrusty bread, to serve. Roast for 3-4 minutes or until fragrant.3 Tip into a food processor and pulse until coarsely ground.
