About Vacuum Freeze-drying:
Vacuum freeze-drying (or lyophilization) is a dehydration process used to preserve perishable materials and/or make materials more convenient to transport.

The basic idea is to completely remove water from materials while leaving the basic structure (composition of the material) intact.  Virtually any type of food or ingredient (solid or liquid) can be freeze-dried.

Vacuum freeze drying works by:
Freezing the material (to maintain its shape & biological structure).
Reducing the surrounding pressure (placed under a vacuum) to allow ice to change directly from a solid to vapour without passing through the liquid phase .  The application of high vacuum in freeze drying causes ice to sublimate faster, making it useful as a deliberate drying process.

A cold condenser chamber and/or condenser plates provide a surface(s) for the vapor to
re-solidify on.  These surfaces must be colder than the temperature of the surface of the material being dried for the vapor to migrate to the collector. Temperatures for this ice collection are typically below -50°C.

The vacuum freeze-drying process is technically called sublimation as moisture (ice crystals) is removed as a gas, similar to evaporation.

As a result, the greatly reduced water content inhibits the actions of micro-organisms and
enzymes that would normally spoil or degrade the substance.
