Join us for a 4-evening Meat Cutting Demonstration & Tasting course, starting Tuesday 7 February. On the first three evenings, Spencer will break down beef, lamb and pork carcasses into their different cuts, explaining each, what to look out for when buying meat, how to store it properly, how to trim it, how grading works and what meat cuts to use for different meals. In the last lesson, he will demonstrate how to make sausages, boerewors, biltong and smoked meats. Participants receive a set of recipes and a meat chart per lesson, and taste dishes cooked by Chez Gourmet which use the cuts demonstrated and cover different cooking methods. The course runs on: 7, 14, 21 Feb and 6 March 2012, from 18:00 to 20:00. Each evening costs R300, and if you book and pay for all four upfront, you will receive a discount of R100 off the total.
