Hospitality Trainers & Associates (HTA) has announced its Goldcrest In-Service Apprenticeship Chef of the Year in a ceremony held at the school this afternoon. Eight contestants were given the opportunity to present a three-course meal to a panel of judges that included Jodi-Ann Pearton, Jan Botha, Jerome Norton and last year’s winner Sydney Nyadeni.
Marco Gaspar of The Saxon claimed first prize in the competition, with Tyrone Mothei Chilwane and Thato Victor Letlape following in second and third place respectively.
Gaspar’s winning menu was as follows:
- Entree: Braised pork belly, parpadelle, confit garlic and mushrooms with soya reduction
- Main: Roast rib eye, chicken livers, sweet potato and butter bean puree, roast chestnuts and a medley of vegetables
- Dessert: Red wine poached pear and berries with a red wine ice-cream
Stephen Billingham, owner of HTA, says: that contestants are selected from a pool of top achievers from the school and are then given the chance to prove themselves to the panel of judges as well as kitchen judge, Kabelo Segone, that is present during the entire preparation of the meal.
